A Patio Barbecue Adventure

Sometimes I like to break our normal dinning room dinner routine by eating on the patio. Fadzwa loves adventure, so she welcomes any change.

For this meal, I got inspired by Cinco de Mayo and summer barbecue. 

For an authentic flare, I decided to try my hand making homemade corn tortillas. I topped them with crumbled Queso Fresco cheese and fresh chopped cilantro. Let’s just say I can’t go back to store bought freezer tortillas. 

Barbecue is practically synonymous with summer and backyard fun. So I sautéed Angus beef tips and simmered in Sweet Baby Ray’s barbecue sauce with a squeeze of lime and fresh Jalapeños. The heat was good!!

I find that guacamole does not need to be complicated. Nice ripe avocados, sprinkled with Himalayan pink salt and a squeeze of lime is all it takes. Quick, easy, and no excessive mixing or chopping.  

Patio table settings can be easy and stylish. I pulled out my paisley Tommy Hilfiger dinner napkins, and gold flatware. I also went for heavy duty blue drinking goblets for color contrast and they easily disguise the finger licking prints.

Growing up, my grandfather farmed watermelons and I have so many fun memories with my cousins having a wet melon feast. I often slice the melon, cover in a large bowl and allow it to chill in the refrigerator for a few hours. Each bite is sweet, cold and satisfying in the summer heat.   

Round up the little ones, take a short journey out to the patio and change up your dinner plans this summer. Enjoy creating new meal time memories.
